I may have not mentioned it yet, but a couple of months ago I started working in a vegan restaurant as a baker, and ever since then my mind has been constantly filled with vegan dessert ideas. I hope that in the future I’ll be able to share more and more exciting and special vegan recipes, but let’s start with a simple one this time. And what could be more easy and simple than a good old brownie recipe. Brownies are one of my favorite go-to party foods, because who doesn’t love brownies. In this recipe I used apples/apple sauce instead of eggs, but if you haven’t jumped on the Veganuary train (yet), feel free to use eggs instead.

Ingredients📄:
2 apples, grated
3/4 cup brown sugar
1/4 cup water
1/4 cup vegetable oil
hint of vanilla extract
1/2 cup cocoa powder
3/4 cup spelt flour
1/2 tsp. salt
1/2 cup melted dark chocolate
additional chocolate chips on top
Instructions🔪:
Add the grated apples into a small pot, cover and ''cook'' for about 10 minutes until it becomes soft and reaches an apple sauce texture (you can also use store-bought apple sauce instead).Meanwhile, measure the sugar and water into another small pot, heat it until the sugar dissolves in the water, about 3-5 minutes.
In a medium bowl mix all the dry ingredients. Add the melted sugar and the apple sauce. Then add the oil, vanilla extract and melted chocolate as well.
Pour the mixture into a baking dish lined with baking paper. Sprinkle with some chocolate chips if desired.
Bake for 30 minutes at 180C for a perfect fudgy result.
