Triple Chocolate Vegan Brownies

I may have not mentioned it yet, but a couple of months ago I started working in a vegan restaurant as a baker, and ever since then my mind has been constantly filled with vegan dessert ideas. I hope that in the future I’ll be able to share more and more exciting and special vegan recipes, but let’s start with a simple one this time. And what could be more easy and simple than a good old brownie recipe. Brownies are one of my favorite go-to party foods, because who doesn’t love brownies. In this recipe I used apples/apple sauce instead of eggs, but if you haven’t jumped on the Veganuary train (yet), feel free to use eggs instead.

Baking time: 30 minutes

Total time: 45 minutes

Ingredients📄:

  • 2 apples, grated

  • 3/4 cup brown sugar

  • 1/4 cup water

  • 1/4 cup vegetable oil

  • hint of vanilla extract

  • 1/2 cup cocoa powder

  • 3/4 cup spelt flour

  • 1/2 tsp. salt

  • 1/2 cup melted dark chocolate

  • additional chocolate chips on top

Instructions🔪:

  1. Add the grated apples into a small pot, cover and ''cook'' for about 10 minutes until it becomes soft and reaches an apple sauce texture (you can also use store-bought apple sauce instead).Meanwhile, measure the sugar and water into another small pot, heat it until the sugar dissolves in the water, about 3-5 minutes.

  2. In a medium bowl mix all the dry ingredients. Add the melted sugar and the apple sauce. Then add the oil, vanilla extract and melted chocolate as well.

  3. Pour the mixture into a baking dish lined with baking paper. Sprinkle with some chocolate chips if desired.

  4. Bake for 30 minutes at 180C for a perfect fudgy result.
